/%category%/%postname%
and for the second one %postname% only but when you are writing a post then you will have to edit permalink manually there with hostname-month-year. This is for monthly posts you can also use event coupon

Also try to stay connected with the other companies sharing coupons because there is no copyright policy on sharing the same coupons so if you get something new from those too you can use them.
